The keto diet is not just a fad diet that will help you lose weight. If followed correctly, this diet can be the best lifestyle change you could give to yourself.
It’s no secret that sugar is not suitable for us. It makes us lazy, harms our mental health, raises the risk of heart disease, type 2 diabetes and even cancer. Many studies have been conducted to see how quitting sugar impacts the body, and all found that quitting sugar showed positive outcomes in almost all subjects. And quitting sugar is the primary purpose of the keto diet.
One of the biggest hurdles when starting the keto diet is finding an alternative to your favourite foods. Whether its mashed potatoes or sticky rice - trust me, you can find an alternative to all.
And one vegetable that seems to do the job correctly for almost all my cravings is a cauliflower. Yes, I’m not kidding. It’s actually true.
Seemingly, cauliflower is a boring, tasteless vegetable that we more than often tend to ignore. But the truth is, a cauliflower on keto diet might become your staple. Cauliflower is packed with healthy fibres, vitamins C, K and B6. this powerhouse of a vegetable can be used as a pizza base to a creamy soup. Here are some of my favourite cauliflower keto recipes.
1. Keto Cauliflower Crust
Take a medium cauliflower, cut it into florets and pulse in a food processor till it comes down to tiny grains. If you do not have a food processor, you could also grate (this will be messy and very time-consuming). Next, put the grated cauliflower in a clean kitchen towel, big enough to hold all the shavings. You will now squeeze all the water out from the grated or pulsed cauliflower. Ensure that you remove as much water as possible. This really is a crucial step - if there is moisture left, the crust won’t hold itself.
Next, grab one egg, grated parmesan cheese (or any cheese of your choice), minced garlic, ½ cup of almond flour, and salt and pepper to taste. Whisk it away and then combine with the cauliflower.
To get your keto cauliflower crust, line a baking pan with parchment paper to keep the crust from sticking to it. Spread your pseudo dough in the pan and spread it evenly using your hands. Next, bake it for 25 minutes or till you get browned edges and smooth golden top. You may use the crust as a flatbread or add your favourite toppings to make a keto-friendly pizza with a cauliflower crust.
2. Keto Cauliflower Rice Bowl
For this recipe, too, you will need to pulse cauliflower florets till they are about the size of a rice grain. I generally make stir fry chicken with veggies with soy sauce and sesame oil for my rice bowl. You could add in whatever you like in your rice bowl, maybe add some eggs, some beef and some peas? Make your mix and once its ready, combine the broth with cauliflower rice and stir till everything is mixed. Let it cook at medium heat for about 3-5 minutes and then eat.
3. Keto Cauliflower and Carrot Soup
I love creamy potato soup. But ever since I started my keto journey, I knew that I had to find alternatives. And I tried this keto cauliflower soup and boy, was I amazed! The upside of this recipe is that it doesn’t take as long as the potatoes to get tender. Get some onions, start with frying them, when they soften add in your carrots and cauliflower florets. Pour the chicken stock and let the vegetables become tender.
Next, pulse this in a food processor or blender to make a smooth puree. Pour it back in a pan to warm it up and to achieve a consistency you like best.
4. Keto Cauliflower Buffalo Bites
These quick and easy keto cauliflower buffalo bites are all that rave! This is a light and easy solution to your buffalo bite cravings. Cut one large cauliflower head into florets. In a separate bowl, add keto flour (almond flour), garlic powder and buttermilk and whisk to make a smooth batter. Dip the florets in the mixture and bake for 20 minutes. Once the bites are light gold and crispy, take them out and toss in a hot sauce. Bake for another 12 minutes, take them out.
5. Keto Shepherd’s Pie
Are you missing the good old shepherd’s pie on your keto diet? Well, not for too long! Make your keto-friendly shepherd’s pie to satiate your desires. You only have to make one small fix. You guessed it right! Replace mashed potatoes with keto creamy mashed cauliflower.
We’ve been conditioned for too long to eat a high carb diet. Whether it is rice, potatoes or high carb bakery goods - we all are guilty of splurging now and then. Unfortunately, these foods give more harm than good when used in the long term. Understanding the keto diet for what it is worth may motivate you to live a healthier, better life.
